min lau recipe2 cegini mmg suka amik dr omputihnya source la sbb it is where the origin kan, n3 pizza ni min ambil dr pizza dough dr foodnetwork.com courtesy of bobby flay .. yibaaa !! ceq mmg minat gilez kat dia, masak bagussshhhh no ! hehe tp min translate kan jd 'malaylish' supaya senang nak refer gikpun sbb xnak mhilangkan mksd asal, bila da translate tu rasa mcm x pueh, nk refer ori gek ... ok dr find & test-out min, dough tu sgt2 fluffy mkn soknya pun still fluffy ...

btw, min guna sukatan 1/2 dr recipes si bobi ni ya, means 3.5 cups jd 2 cups, mauripan min guna 1/2 paket jek ... resepi asal generated 2pcs pizza 7inch, min dpt 2pcs 5inch ... sbb korum x ramai...
ok jom kita start

bahan2nya :-)
----------------

  • 3 1/2 to 4 cawan tepung roti, perlukan lebih byk tuk rolling - substitute all purpose flour
  • 1 sdt gula
  • 1 paket mauripan or any yis kering
  • 2 sdt garam kosher
  • 1 1/2 cawan air suam - 110 F or 47C
  • 2 sdb minyak zaitun/olive, plus 2sdb lagi tuk letak kat bowl

 

method mbuatnya :-)

  • satukan tepung roti, gula, mauripan dan garam kosher ke dlm mangkuk mixer. .. semasa mixer 'running' tambahkan air suam sikit2 dan 2 sdb minyak olive sehingga dough menjadi 'bola'... guna tangan pun buleh ...



  • jika doh melekit/lembik, leh tambahkan tepung 1 sd dr semasa ke semasa, jika dough terlalu kering pula tambah air suam 1 sd sikit2... ambil doh dan alihkan ke permukaan yg telah ditabur tepung dan start menguli dan bentukkkan menjadi bola.
 
  • minyakkan mangkuk dgn 2sdb minyak tadi, ambil doh yg diuli tadi, tutup ngan plastic wrap dan rehatkan di dalam suhu bilik selama 1 jam untuk ianya 'double up in sizes'. .. 
 
  • selapas 1 jam uli semula di permukaan yg rata yg telah ditaburkan tepung gandum bahagikan 2 bhgn min dpt pizza mini 5" each ..... cover ke-2nya ngan towel or plastic wrap dan rehatkan selama 10 mins .. slps itu canaikan di atas permukaan rata dan bentukkan bulat .. ready nk buat pizza da ni ..
  • mula2 letakkan sos, min letak paste rendang kelmarin (sellau buat byk paste like rendang, asam pedas, ayam berempah paste n then frozen, next nk masak ezy pezy la), lps tu put sos cili, taburkan daging, timun, udang, cili segar, dan diakhiri ngan cheddar & parmesan.

  • so la ni dah ready to bake bakar pd suhu 150C selama 15 minits, the cheezy will be meltiing and makes me drooling heee ... masa panas potongkan ikut suka  dan boleh la dingap !

  • meggunakan tepung roti/bread flour akan memberikan tekstur yg lebih 'crispy' manakala tepung serbaguna/all purpose flour akan memberikan tekstur yg 'chewier' crust.



Resepi Asal Bobby Flay

Ingredients :-
----------------





3 1/2 to 4 cups bread flour, plus more for rolling
1 teaspoon sugar
1 envelope instant dry yeast
2 teaspoons kosher salt
1 1/2 cups water, 110 degrees F
2 tablespoons olive oil, plus 2 teaspoons

Directions  :-)

  1. Combine the bread flour, sugar, yeast and kosher salt in the bowl of a stand mixer and combine. While the mixer is running, add the water and 2 tablespoons of the oil and beat until the dough forms into a ball. If the dough is sticky, add additional flour, 1 tablespoon at a time, until the dough comes together in a solid ball. If the dough is too dry, add additional water, 1 tablespoon at a time. Scrape the dough onto a lightly floured surface and gently knead into a smooth, firm ball.
  2. Grease a large bowl with the remaining 2 teaspoons olive oil, add the dough, cover the bowl with plastic wrap and put it in a warm area to let it double in size, about 1 hour. Turn the dough out onto a lightly floured surface and divide it into 2 equal pieces. Cover each with a clean kitchen towel or plastic wrap and let them rest for 10 minutes.

Using bread flour will give you a much crisper crust. If you can't find bread flour, you can substitute it with all-purpose flour which will give you a chewier crust.
